The Wine
Recanati Cabernet Sauvignon is a medium bodied dry wine with a bright ruby color. Its deeply fruity aroma of cherries and blackberries is layered with the scents of smoky oak, caramel and Mediterraneam herbs.

The Harvest
These Cabernet Sauvignon grapes are grown in vineyards in Israel's Galilee. Small Cabernet clusters are hand harvested in mid to late September. The crushed grapes are chilled and then "cold macerate" for two days prior to fermentation which preserves the fruity-spicy character of the cepage. After ten days fermenting the Cabernet is pressed into French and American oak barrels, where it ages for eight months prior to bottling. Delicious upon release, the wine will soften and gain complexity with 2-4 years of aging.

Serve Recanati Cabernet Sauvignon at room temperature of briefly chilled to accompany grilled or roasted red meat or fowl, or sharp pungent cheese like parmesan, pecorino, roquefort and gruyere
